This is a recipe that Uncle Gus made for us when we were in Florida visiting a few years ago. Great with tortilla chips!
CAPE CORAL CAVIAR
1 can black-eyed peas rinsed and drained
1 small green pepper diced small
1 small onion diced small
½ red pepper diced small OR
use sweet roasted red peppers from a jar - blotted dry & sliced
1 tsp. red pepper flakes
¼ cup Italian parsley - chopped
· Put drained black-eyed peas in a bowl and mash down about ½ with a fork
· Add all remaining ingredients and mix
· Add Mustard Vinaigrette dressing and toss
Use as a dip or side dish
MUSTARD VINAIGRETTE DRESSING
½ Tbs. Dijon mustard
2 Tbs. red wine vinegar
1 clove garlic - minced
½ cup extra virgin olive oil
salt & pepper to taste
· In a small mixing bowl, place mustard and mix with vinegar (until spoon is clean of mustard)
· Add garlic, salt & pepper and slowly whisk in olive oil. Taste and adjust seasonings
· Place in a jar and refrigerate. Shake jar before using

Just put all ingredients in a jar and shake well.
Use for salad dressing or Cape Coral Caviar.
