 Desserts - Banana Nut Bread - Mary [Print] 
  This is always a big hit at bake sales and family gatherings (with or without nuts) -- freezes well also.
BANANA NUT BREAD
  
1 cup butter
2 cups sugar
3 eggs
3 cups cake flour*
2 ½ tsp. baking soda
4 medium ripe bananas
½ pint sour cream OR 1 cup buttermilk
1 cup chopped nuts (optional)
 
 
 
 
·         Preheat oven to 350º. Lightly grease two loaf pans.
·         Mash bananas and set aside.
·         Blend flour and baking soda together; set aside.
·         Cream butter. Add sugar and mix.
·         Add 1 egg at a time, stirring after each addition.
·         Alternately add sour cream and flour to butter mixture, mixing thoroughly after each addition.
·         Add bananas and nuts. Bake at 350º for 60 minutes or until pick comes out clean
 
Makes 2 loaves.
 
*1 cup cake flour = 1 cup less 2 Tbl. all-purpose flour.
